Sugar Cookies

Growing up my mother used to make these sugar cookies every year. I always liked helping, and when I was about 12 or so I ended up taking over making the cookies myself. I edited the instructions a bit to make them easier, and put a few tips in too... Enjoy!


1 cup butter or margarine (two sticks)
1 cup sugar
2 eggs
1 teaspoon vanilla
3 cups flour
1/2 teaspoon salt
1 teaspoon baking powder


Mix together butter and sugar, and beat until light and fluffy.

Beat in eggs and vanilla, add flour, salt and baking powder.

Blend well.

Chill 2 to 3 hours.

Knead dough into 4-5 balls (dough may be crumbly if you did not blend well enough, I am guilty of this myself at times %) If this happens, add a couple drops of water at a time to get correct consistency).

Roll out balls to sheets 1/8 inches thick, cut with cookie cutters.

Bake at 350 degrees for 10-12 minutes.


Frosting


You may just like the cookies the way they are, but I love frosting... so here is the quick frosting recipe I use.

1/2 cup soft butter (1 stick)
1 1/2 cup confectioner's sugar
2 teaspoons vanilla
food coloring


Mix butter, confectioner's sugar, and vanilla together until creamy.

Mix in a couple of drops of food coloring, color of your choice (I usually divide up the frosting and make multiple colors of frosting).
