PrincessLeia2's Vegetarian Tomato SauceIn the early part of my parent's marriage they worked on this recipe, wanting a healthy, good tasting sauce, and not pleased with what they found at the store. All growing up I was pleasantly spoiled by this wonderful sauce, and even today no sauce (store bought or in a restuarant) can compare. I have edited the recipe a bit to remove the meat and still have it preserve a good taste. When making this, remember it makes over 50 oz of sauce, be prepared to freeze some (it freezes well). 3 Tablespoons Oil 1 Bay Leaf 1 teaspoon Oregano 1/8 teaspoon Margoram 1/4 teaspoon Thyme 1/2 teaspoon Hot Red Pepper 1/4 teaspoon Basil 1 pinch Sage 1/2 Tablespoon Parmesean Cheese (Grated) 1/2 Tablespoon Romano Cheese (Grated) 2 Cloves Garlic (Chopped) 1 Large Onion (Chopped) 2 Tablespoons Red Wine 2 28 oz Cans Peeled Italian Tomatoes 2 28 oz Cans Tomato Sauce 1 6 oz Can Tomato Paste 1/4 teaspoon Salt 1/2 teaspoon Sugar 1. Soften onions and garlic in 3 Tablespoons oil 2. Add Bay Leaf, Oregano, Margoram, Thyme, Hot Red Pepper, Basil, and Sage, stir briefly 3. Add peeled tomatoes, simmer for 5 minutes 4. Add tomato sauce, simmer for 1 hour 5. Add tomato paste, simmer for 1 hour 6. Add cheese and wine, simmer for another 30-60 minutes Throughout this process you will want to stir the sauce frequently |
